Fantastic Food Friday!

It's that day again! First of all though, if you haven't gotten a peek of our newly redorated home, scroll on down and take a look! See that couch--I can't wait to lie on it for just 15 minutes before my hubby gets home from work while the kiddos are still napping. It just might be the best 15 minutes of my day today. ha!

But let's get onto the good stuff. The part that is responsible for the drool you'll soon have dribbling down your chin like my teething 19-month-old.

Shredded Beef Soft Tacos (inspired by Scott's and My conversation and our appetizer on our date last weekend!)
1 beef roast
2 limes
Carrots
Cabbage
shredded Queso Blanco (a tasty mexican cheese--look for it in your local deli and then shred it yourself, or you could substitute with a different type of cheese)
tortillas

Cook a beef roast for 8 hours in a slow-cooker or crock pot (whatever you prefer calling it!) in 1 cup of water and the juice of one lime

Shread the beef with two forks when it is done cooking and then keep it on the warm setting until ready to serve

Make a dry slaw by shredding your carrots and cabbage

Slice a lime into personal-sized pieces for each

Each person can make their own soft tacos with the shredded beef and topped with the slaw, cheese and a spritz of lime.

Adding black beans is also a delicious option!


Now onto some side dishes! These don't necessarily go well with today's recipe, but I thought I'd share two of our favorite side dishes this week which go well with most any american cuisine!

Roasted Onion Potatoes (inspired by Lipton's Onion Soup box)
6 or more potatoes
1/4 cup olive oil
1 packet of dry Lipton Onion soup

Dice potatoes into approximately 3/4 inch cubes and place into a baking dish
Pour olive oil and soup mix over potatoes
Stir to coat each potato evenly & cover dish with foil
Bake at 425 for approximately 40 minutes (sometimes it takes a little longer depending on how many potatoes you're making)

Green Beans Almondine (inspired by my mother-in-law, Jan!)
1 tablespoon toasted sesame oil (or olive oil works too)
1 lb. fresh green beans (from the produce section, no canned or frozen beans here folks!)
1 tablespoon soy sauce (or more to taste)
1/2 cup almond slivers

Roast the almonds on a cookie sheet in an oven at 350 degrees for approximately 5 minutes
Heat the oil in a frying pan
Saute the fresh green beans in the heated oil for 5-6 minutes, stirring frequently
Add 1/4 cup of water to the green beans; cover and allow to cook for 5 minutes
Uncover, add almond slivers and soy sauce & stir
