Fantastic Food Friday!
Greetings from sunny, warm North Carolina where I'm about to put on my sundress & flipflops before we head to the beach!! We are visiting my sister Brooke, her sons (my nephews!) Parker & Preston, and my brother-in-law TJ for a long weekend. TJ is serving in the Marines and is preparing to leave for his third tour in 3 years of the Middle East, so we all decided we should come down to say goodbye and spend some quality time all together before he departs.
In honor of this being some special family time for us, I've decided to share my all-time favorite home cookin' recipe that is perfect for an everyday meal!
Slow-Cooker Turkey & Dressing (Inspired by Southern Living)
1 8oz pkg. herb-seasoned stuffing mix
1 onion, chopped
2 celery ribs, chopped
1 cup dried cranberries
3/4 cup chicken broth
3 Tbs. melted butter or margarine
1 3-lb. or so frozen boneless turkey breast, thawed
Salt, Pepper, Thyme
Spray non-stick cooking spray inside your slow cooker
Add stuffing mix, onion, celery & cranberries; mix
Pour chicken broth and melted butter / margarine over stuffing
Place turkey breast on top of stuffing (be sure to remove all packaging from turkey breast, including the string / netting)
Cook on high 1 hour and then on low for 6 hours following
We have "Thanksgiving" dinner about once a month and go all out--mashed potatoes, warm rolls, etc. Enjoy!
