Fantastic Food Friday!

I cannot believe it's Friday already?!!? Where has this week gone? Actually, I'm glad in a way that we're almost through this week because there have been some rotten moments along the way! But let's focus on the good things in life...food!!

Bean Dip (Inspired by Mama Hess :) and served at every party I've ever hosted!)
--I had a Premier Designs jewelry show on Sunday and have had many requests for this recipe since I made it for the party--so here you go gals!

1 can of black beans, rinsed
1 can of chicken
1 jar of salsa
1 cup of shredded cheese (I use cheddar, but you could use the mexican blend or something else)
1 pkg. frozen creamed spinach, thawed

Mix the 5 ingredients & bake at 350 for 30 minutes
Serve warm w/ tortilla chips!
Difficult one, eh? *chuckle*

You could also make this ahead and freeze single-servings of it for when the craving strikes!!


EASY Rotisserie Chicken (inspired by my friend Virginia!)
1 whole chicken
McCormicks Rotisserie Spice (jars of it available in the spices section of your grocery store)

Rinse the chicken and place into a crockpot / slow cooker. Shake rotisserie spice onto it generously. Cook on low setting 8-10 hours.

One warning here: the chicken is going to be VERY moist and will fall apart easily. Make sure to remove the entire chicken and put it on a cutting board to slice so that you can save as much of the meat as possible!


Peppercini Beef (Inspired by my friends Shannon & Jeff!)

1 beef roast
1 jar peppercinis (available next to the pickles or in the Italian section of your grocery store)

Put any type of beef roast into your crock pot / slow cooker and dump one jar of peppercini's over it. Cook on low setting all day.

Using tongs, remove the peppercinis just before dinner and save them on a cutting board. Meanwhile, shread the beef using two forks or whatever other kitchen tools you have for shreading! Take any meat out that children or those who don't like spicy things will be eating at this time.

Chop the cooked peppercini's and put them back into the shreaded beef. Mix it all up.

Make hoagies with the peppercini beef, a slice of swiss or provolone cheese and A1 sauce. On a scale of spiciness from 1 to 10, the meat without peppercinis is a 2, the meat with peppercinis is about a 6.
